Ingrédients
- 1 1/2 1/2 cups rolled oats
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup honey
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond flour, shredded coconut, baking powder, and salt.
- In another bowl, mix the honey, melted coconut oil, and vanilla extract until well combined.
- Pour the wet ingredients into the dry mixture and stir until fully incorporated.
- Gently fold in the fresh raspberries.
- Pour the mixture into the prepared baking pan, smoothing out the top.
- Sprinkle the sliced almonds evenly over the top.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely before slicing and serving.
