Quinoa and Edamame Power Bowl - Vegan
The Quinoa and Edamame Power Bowl is a vibrant and nutritious dish that combines fluffy quinoa with the bright green pop of edamame. Ingrédients
- 1 cup quinoa, rinsed
- 2 cups water
- 1/2 teaspoon salt
- 1 cup edamame, shelled and cooked
- 1 large avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cucumber, diced
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon soy sauce
- 1/4 teaspoon black pepper
Instructions
- In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed and quinoa is tender. Let it cool slightly.
- In a large bowl, combine the cooked quinoa, edamame, avocado, cherry tomatoes, red onion, cucumber, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, soy sauce, and black pepper to make the dressing.
- Pour the dressing over the quinoa mixture and toss to combine.
- Serve immediately, or chill in the refrigerator for up to 2 hours to allow the flavors to meld.
