Ingrédients
- 3 cups rolled oats
- 1 cup pecans, chopped
- 1/3 cup pumpkin seeds
- 1/3 cup sunflower seeds
- 1/4 cup maple syrup
- 1/4 cup olive oil
- 1/3 cup pumpkin puree
- 3 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon salt
- 1/2 cup dried cranberries
Instructions
- Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine rolled oats, pecans, pumpkin seeds, and sunflower seeds.
- In a separate bowl, whisk together the maple syrup, olive oil, pumpkin puree, brown sugar, cinnamon, nutmeg, allspice, and salt.
- Pour the wet mixture over the dry ingredients, stirring until the oats are evenly coated.
- Spread the mixture evenly on the prepared baking sheet and bake for 40-45 minutes, stirring every 15 minutes, until the granola is golden brown.
- Remove from the oven and let it cool completely, then stir in the dried cranberries.
- Store in an airtight container for up to two weeks.
