Ingrédients
- 2 cups spinach
- 1 can chickpeas, drained and rinsed
- 1 cup marinated artichoke hearts, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, pitted and halved
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
Instructions
- In a large bowl, combine the spinach, chickpeas, artichoke hearts, red onion, olives, and cherry tomatoes.
- In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, salt, pepper, and oregano.
- Pour the dressing over the salad and toss to combine.
- Sprinkle the feta cheese over the top of the salad.
- Serve immediately or refrigerate for up to 2 hours before serving.
