Moroccan Carrot Chickpea Salad - Vegetarian
The Spiced Moroccan Carrot and Chickpea Delight is a vibrant and aromatic salad that will transport your taste buds to the sun-kissed markets of Morocco. Ingrédients
- 2 cups grated carrots
- 1 can chickpeas, drained and rinsed
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup raisins
- 1/4 cup sliced almonds, toasted
- 2 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Salt to to taste
- Black pepper pepper to taste
Instructions
- In a large bowl, combine the grated carrots, chickpeas, chopped parsley, chopped mint, raisins, and toasted sliced almonds.
- In a small bowl, whisk together the olive oil, lemon juice, honey, ground cumin, ground cinnamon, ground ginger, salt, and black pepper until well combined.
- Pour the dressing over the carrot and chickpea mixture and toss well to coat everything evenly.
- Let the salad sit for at least 30 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature.
