Ingrédients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 large mango, peeled and diced
- 1 red red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 large avocado, diced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a medium saucepan, bring water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa has absorbed the water. Remove from heat and let it cool.
- In a large bowl, combine the cooked and cooled quinoa, black beans, mango, red bell pepper, red onion, cilantro, and avocado.
- In a small bowl, whisk together the lime juice, olive oil, honey, cumin, salt, and black pepper.
- Pour the dressing over the quinoa mixture and toss gently to combine.
