Asian-Inspired Tofu and Noodle Salad - Vegan

Ingrédients
- 1 pound firm tofu
- 8 ounces ounces rice noodles
- 1 cup shredded carrots
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced cucumber
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh basil
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1/2 teaspoon chili flakes
- 1/4 cup chopped peanuts
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.
- Press the tofu to remove excess moisture. Cut into small cubes and set aside.
- In a large bowl, combine the shredded carrots, red bell pepper, cucumber, cilantro, mint, and basil.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, maple syrup, minced garlic, grated ginger, and chili flakes.
- Add the tofu cubes to the vegetable mixture and gently toss to combine.
- Pour the dressing over the salad and toss until everything is well coated.
- Add the cooked rice noodles and toss again to mix thoroughly.
- Garnish with chopped peanuts before serving.
