Lemon Herb Quinoa Salad - Vegetarian

Ingrédients
- 1 cup quinoa
- 2 cups water
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onions, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup feta cheese, crumbled
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
- Remove the quinoa from heat and let it sit, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
- In a small bowl, whisk together the olive oil, lemon juice, lemon zest, salt, and black pepper.
- Add the cherry tomatoes, cucumber, red onions, parsley, and mint to the quinoa. Pour the dressing over the salad and toss to coat evenly.
- Sprinkle with feta cheese before serving.
