Israeli Couscous Mediterranean Salad - Vegetarian
The Israeli Couscous Mediterranean Salad is a vibrant and refreshing dish, perfect for any occasion. This salad combines tender Israeli couscous with a medley of fresh vegetables, tangy feta cheese, and aromatic herbs, creating a symphony of flavors and textures in every bite.
Ingrédients
- 1 cup Israeli couscous
- 2 cups water
- 1/4 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1 clove garlic, minced
- Salt and and pepper to taste
Instructions
- In a medium saucepan, bring water and salt to a boil.
- Add Israeli couscous, reduce heat to low, cover, and simmer for 10 minutes or until the couscous is tender and water is absorbed.
- Remove the couscous from heat, fluff with a fork, and let it cool to room temperature.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint.
- In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, dried oregano, and garlic to make the dressing.
- Add the cooled couscous to the vegetable mixture and pour the dressing over the top.
- Toss gently to combine all ingredients and season with salt and pepper to taste.
- Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
