Ingrédients
- 2 cups green beans, trimmed
- 1/4 cup slivered almonds, toasted
- 1/4 cup red onion, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Bring a large pot of salted water to a boil and blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and immediately transfer to an ice bath to cool.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, black pepper, and red pepper flakes to make the dressing.
- In a large bowl, combine the cooled green beans, toasted almonds, and red onion. Drizzle with the dressing and toss to coat.
