Ingrédients
- 2 large chicken breasts
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup BBQ sauce
- 4 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels, cooked
- 1 cup black beans, rinsed and drained
- 1/2 cup red onion, finely sliced
- 1/2 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 1/4 cup cilantro, chopped
- 1 lime, lime, cut into wedges
Instructions
- Preheat grill to medium heat.
- Season the chicken breasts with salt, black pepper, and olive oil.
- Grill the chicken for 6-7 minutes on each side, or until fully cooked, occasionally basting with BBQ sauce during the last few minutes.
- Remove chicken from grill and let it rest for 5 minutes before slicing into thin strips.
- In a large bowl, combine salad greens, cherry tomatoes, corn kernels, black beans, red onion, and shredded cheddar cheese.
- Top the salad with the sliced BBQ chicken.
- Drizzle ranch dressing over the salad and sprinkle with chopped cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.
