Vegetarian Black Bean Burgers - Vegetarian
The Vegetarian Black Bean Burgers bring together the heartiness of black beans with the fresh, uplifting flavors of bell pepper, red onion, and avocado. The patties are perfectly seasoned with just the right amount of spice, nestled in a whole wheat bun, and topped with vibrant spinach leaves, juicy tomato slices, and creamy avocado.
Ingrédients
- 1 can black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup red onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 large egg
- 4 whole whole wheat burger buns
- 1/2 cup fresh spinach leaves
- 4 slices tomato
- 1/4 cup avocado, sliced
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
- Add the breadcrumbs, red onion, bell pepper, garlic, cumin, chili powder, salt, black pepper, and egg to the mashed beans. Mix until well combined.
- Form the mixture into four equal patties.
- Heat olive oil in a large skillet over medium heat. Add the patties and cook for about 4-5 minutes on each side, or until browned and heated through.
- Toast the burger buns in the skillet or a toaster oven.
- Assemble the burgers by placing a black bean patty on the bottom half of each bun. Top each with fresh spinach leaves, a slice of tomato, and avocado slices. Cover with the top half of the bun and serve immediately.
