Ingrédients
- 1 cup black beans, drained and rinsed
- 1/2 cup corn
- 1/2 cup grated carrots
- 1/2 cup rolled oats
- 1/4 cup finely chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup breadcrumbs
- 1 tablespoon olive oil
- 2 tablespoons soy sauce
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 whole whole wheat burger buns
- 1 avocado, avocado, sliced
- 1 tomato, tomato, sliced
- 4 lettuce lettuce leaves
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
- Add the corn, grated carrots, rolled oats, red onion, cilantro, breadcrumbs, olive oil, soy sauce, cumin, smoked paprika, garlic powder, salt, and black pepper. Mix until well combined.
- Form the mixture into 4 patties and refrigerate for at least 30 minutes to help them firm up.
- Heat a skillet over medium heat and lightly grease with oil. Cook the patties for 4-5 minutes on each side, or until they are browned and crisp.
- Toast the burger buns in the skillet or a toaster until golden brown.
- Assemble the burgers by layering each patty with avocado slices, tomato slices, and lettuce leaves on the toasted buns. Serve immediately.
