Tofu Tikka Masala - Vegan

Marinated tofu cooked in a fragrant tomato and coconut milk sauce creates a dish that is both hearty and delicious, perfect for any night of the week.
Ingrédients
- 1 pound firm tofu, pressed and cubed
- 2 tablespoons olive oil
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 1 tablespoon garam masala
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon ground coriander
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 inch inch ginger, minced
- 1 can (15 oz) tomato sauce
- 1 cup coconut milk
- 1/2 cup fresh cilantro, chopped
- Salt and and pepper to taste
- Basmati rice rice or naan for serving
Instructions
- In a bowl, combine yogurt, lemon juice, garam masala, turmeric, cumin, paprika, chili powder, and coriander. Mix well to form a marinade.
- Add cubed tofu to the marinade, ensuring each piece is well coated. Marinate for at least 1 hour, or overnight for better flavor.
- Heat olive oil in a large skillet over medium heat. Add the onions and cook until translucent, about 5 minutes.
- Add garlic and ginger, cooking for an additional 2-3 minutes until fragrant.
- Add the marinated tofu and cook until the tofu is slightly browned, about 5-7 minutes.
- Stir in the tomato sauce, and bring the mixture to a simmer.
- Reduce the heat to low and slowly add the coconut milk, stirring constantly until well combined.
- Simmer the mixture for another 10 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
- Serve hot with basmati rice or naan.
