Miso Glazed Eggplant - Vegan

Ingrédients
- 2 large eggplants
- 3 tablespoons white miso paste
- 2 tablespoons mirin
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 2 tablespoons water
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame seeds
- 2 green green onions, finely chopped
Instructions
- Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper.
- Slice the eggplants in half lengthwise and score the flesh in a crisscross pattern without cutting through the skin.
- In a small bowl, whisk together the miso paste, mirin, soy sauce, sesame oil, rice vinegar, honey, water, garlic, and ginger until smooth.
- Brush the miso mixture generously over the cut sides of the eggplants.
- Place the eggplants on the prepared baking tray, cut side up.
- Roast in the preheated oven for 25-30 minutes, or until the eggplants are tender and caramelized.
- Sprinkle the roasted eggplants with sesame seeds and green onions before serving.
