Ingrédients
- 1 cup quinoa
- 2 cups water
- 1/2 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 cup red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
Instructions
- Rinse the quinoa under cold water.
- In a medium saucepan, bring the water to a boil. Add the quinoa and salt. Reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, olives, red onion, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, garlic, and black pepper.
- Drizzle the dressing over the quinoa mixture and gently toss to combine.
- Serve immediately or refrigerate for up to 2 days for enhanced flavor.
