  • Add the chopped tomato and grated carrot, cooking for an additional 2-3 minutes until softened.
  • Remove the vegetable mixture from the skillet and set aside.
  • Wipe out the skillet and add the remaining 1 tablespoon of olive oil.
  • Pour 1/4 cup of batter into the skillet, spreading it thinly to form a crepe.
