Ingrédients
- 1 large head of cauliflower
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1 red red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- Juice of of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cut the cauliflower into florets and place them in a food processor. Pulse until it resembles couscous.
- Heat the olive oil in a skillet over medium heat. Add the cauliflower and cook for about 5-7 minutes until tender.
- In a large bowl, combine the cooked cauliflower, cherry tomatoes, cucumber, red bell pepper, red onion, and Kalamata olives.
- Add the feta cheese, parsley, and mint to the bowl, mixing gently.
- In a small bowl, whisk together the lemon juice, salt, and black pepper.
- Pour the dressing over the cauliflower mixture and toss to combine.
- Serve immediately or refrigerate for up to 2 hours to allow the flavors to meld.
