Veggie Cauliflower Chocolate Pudding - Vegan

Ingrédients
- 2 cups steamed cauliflower florets
- 1/2 cup unsweetened cocoa powder
- 1/3 cup honey or maple syrup
- 1 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon sea salt
- 6 large medjool dates, pitted
- 1/2 teaspoon ground cinnamon
- 1/4 cup dark chocolate chips, melted
Instructions
- Steam the cauliflower florets until tender and let cool slightly.
- In a high-speed blender, combine steamed cauliflower, cocoa powder, honey or maple syrup, almond milk, vanilla extract, sea salt, pitted dates, and ground cinnamon.
- Blend on high until the mixture is completely smooth and creamy, scraping down the sides as necessary.
- Pour the melted dark chocolate chips into the blender and blend again until fully incorporated.
- Transfer the pudding mixture into serving bowls or a large dish.
- Chill in the refrigerator for at least 2 hours before serving.
- Garnish with additional dark chocolate chips or fresh berries before serving, if desired.
