Torta della Nonna - Vegetarian
The Torta della Nonna, or Grandmother's Custard Tart, is a beloved Italian dessert that combines the comforting flavors of homemade custard with the subtle crunch of pine nuts. With a golden, flaky crust encasing a rich, creamy filling, this tart is as visually appealing as it is delicious.
Ingrédients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, chilled and cubed
- 1 large egg
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 pinch pinch salt
- 2 cups whole milk
- 1/2 cup granulated sugar
- 4 large egg yolks
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/2 cup pine nuts
- Powdered sugar sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the flour, 1/2 cup granulated sugar, and salt. Mix until well combined.
- Add the chilled butter cubes to the flour mixture and rub together with your fingertips until the mixture resembles coarse breadcrumbs.
- Add 1 large egg, 1 large egg yolk, and 1 teaspoon vanilla extract to the mixture. Mix until the dough comes together to form a ball. Wrap in plastic and refrigerate for 30 minutes.
- For the custard, heat the whole milk in a saucepan until almost boiling.
- In a separate bowl, whisk together the 4 large egg yolks and 1/2 cup granulated sugar until pale and creamy. Add the cornstarch and whisk until smooth.
- Slowly pour the hot milk into the egg mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in 1 teaspoon vanilla extract. Let the custard cool.
- Roll out the chilled dough on a lightly floured surface and fit it into a tart pans. Trim the edges and prick the base with a fork.
- Spread the cooled custard evenly over the tart base.
- Sprinkle the pine nuts over the custard.
- Bake in the preheated oven for 35-40 minutes, or until the crust is golden and the pine nuts are lightly browned.
- Allow the tart to cool completely, then dust with powdered sugar before serving.
