Ingrédients
- 1 pound puff pastry, thawed
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/4 cup powdered sugar for dusting
Instructions
- Preheat the oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface to about 1/8 inch thick. Cut into rectangles of about 4x6 inches.
- Place the pastry rectangles on a baking sheet lined with parchment paper. Prick the surfaces with a fork to prevent puffing and bake for 15-20 minutes or until golden brown. Let cool on a wire rack.
- In a saucepan, combine heavy cream and milk. Heat until just boiling, then remove from heat.
- In a bowl, whisk together egg yolks, granulated sugar, and cornstarch until pale and thick. Slowly pour the hot cream mixture into the yolk mixture while whisking continuously.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the pastry cream thickens. Remove from heat and stir in the vanilla extract. Let cool completely.
- In a separate saucepan, combine mixed berries, honey, and lemon juice. Cook over medium heat until the berries break down and the mixture thickens into a compote. Set aside to cool.
- To assemble, spread a layer of pastry cream on one rectangle of puff pastry, top with another rectangle, and repeat. Add a layer of berry compote between the layers for added flavor.
- Dust the top layer with powdered sugar before serving.
