Pineapple Coconut Lime Bars - Vegetarian
The Pineapple Coconut Lime Bars are a trip to a tropical paradise in every bite. Ingrédients
- 1 cup all-purpose flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, melted
- 1 1/2 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 1 teaspoon lime zest
- 1/2 cup lime juice
- 1/2 cup pineapple juice
- 1/4 teaspoon salt
- 1/4 cup powdered sugar, for dusting
- 1/2 cup toasted coconut flakes, for garnish
Instructions
- Preheat the oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper.
- In a medium bowl, combine 1 cup of flour, shredded coconut, and powdered sugar. Stir in the melted butter until the mixture is crumbly.
- Press the mixture into the bottom of the prepared baking dish to form a crust. Bake for 15 minutes or until lightly golden.
- In a large bowl, whisk together the granulated sugar and 1/4 cup of flour. Add the eggs, lime zest, lime juice, pineapple juice, and salt, and whisk until well combined.
- Pour the mixture over the hot crust. Return to the oven and bake for an additional 25 minutes, or until the filling is set and slightly browned.
- Remove from the oven and allow to cool completely in the baking dish.
- Once cooled, lift the bars out of the dish using the parchment paper. Dust the top with powdered sugar and sprinkle with toasted coconut flakes.
- Cut into squares and serve. Store any leftovers in the refrigerator.
