Instructions
 

  • Preheat the oven to 350°F (175°C). Line a 9x13 inch baking dish with parchment paper.
  • In a medium bowl, combine 1 cup of flour, shredded coconut, and powdered sugar. Stir in the melted butter until the mixture is crumbly.
  • Press the mixture into the bottom of the prepared baking dish to form a crust. Bake for 15 minutes or until lightly golden.
  • In a large bowl, whisk together the granulated sugar and 1/4 cup of flour. Add the eggs, lime zest, lime juice, pineapple juice, and salt, and whisk until well combined.
  • Pour the mixture over the hot crust. Return to the oven and bake for an additional 25 minutes, or until the filling is set and slightly browned.
  • Remove from the oven and allow to cool completely in the baking dish.
  • Once cooled, lift the bars out of the dish using the parchment paper. Dust the top with powdered sugar and sprinkle with toasted coconut flakes.
