Ingrédients
- 1 cup almond flour
- 2 tablespoons melted butter
- 2 tablespoons powdered erythritol
- 1/2 teaspoon vanilla extract
- 8 ounces ounces cream cheese, softened
- 1/4 cup powdered erythritol
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup fresh strawberries
- 1/4 cup fresh blueberries
- 1 tablespoon water
- 1 tablespoon powdered erythritol
Instructions
- Preheat oven to 350°F (177°C) and line a muffin tin with paper liners.
- In a bowl, mix almond flour, melted butter, 2 tablespoons powdered erythritol, and 1/2 teaspoon vanilla extract until well combined. Press the mixture into the bottom of each muffin liner to form the crust.
- In a separate bowl, beat together the cream cheese, 1/4 cup powdered erythritol, egg, and 1 teaspoon vanilla extract until smooth.
- Divide the cream cheese mixture evenly among the muffin liners, smoothing the tops with a spoon.
- Bake for 15-18 minutes, or until the centers are just set. Allow to cool completely before removing from the tin.
- To make the berry compote, combine strawberries, blueberries, water, and 1 tablespoon powdered erythritol in a small saucepan over medium heat. Cook, stirring occasionally, until the berries break down and the mixture thickens, about 5-7 minutes. Allow to cool.
- Once cheesecake bites are cooled, spoon the berry compote on top of each bite before serving.
