- 2 tablespoons melted butter
- 2 tablespoons powdered erythritol
- 1/2 teaspoon vanilla extract
- 8 ounces ounces cream cheese, softened
- 1/4 cup powdered erythritol
- 1 teaspoon vanilla extract
- 1/4 cup fresh strawberries
- 1/4 cup fresh blueberries
- 1 tablespoon powdered erythritol
Preheat oven to 350°F (177°C) and line a muffin tin with paper liners.
In a bowl, mix almond flour, melted butter, 2 tablespoons powdered erythritol, and 1/2 teaspoon vanilla extract until well combined. Press the mixture into the bottom of each muffin liner to form the crust.
In a separate bowl, beat together the cream cheese, 1/4 cup powdered erythritol, egg, and 1 teaspoon vanilla extract until smooth.
