Ingrédients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 2 large eggs
- 1 cup vegetable oil
- 1 can (8 oz) crushed pineapple, undrained
- 1 1/2 1/2 cups mashed ripe bananas
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped dried apricots
- 1 package package (8 oz) cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, beat the eggs and oil together until combined. Add the crushed pineapple, bananas, and vanilla extract. Mix well.
- Gradually add the wet ingredients to the dry ingredients, mixing just until combined. Stir in the pecans, coconut, and dried apricots.
- Divide the batter evenly among the three prepared cake pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks.
- To make the frosting, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar and vanilla extract, beating until the frosting is light and fluffy.
- Once the cakes are completely cool, spread the frosting between the layers, on the top, and around the sides of the cake.
- Garnish with extra chopped pecans, if desired. Refrigerate the cake for at least 1 hour before serving to enhance the flavors.
