Grilled Peach Melba - Vegetarian

Ingrédients
- 4 large ripe peaches, halved and pitted
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 cup raspberries
- 2 tablespoons sugar
- 1 teaspoon lemon juice
- 1 pint pint vanilla ice cream
- 1/4 cup sliced almonds, toasted
- Fresh mint mint leaves, for garnish
Instructions
- Preheat your grill to medium-high heat.
- Brush the peach halves with olive oil.
- Place the peaches cut side down on the grill and cook for about 3-4 minutes until they are slightly charred and softened.
- Remove the peaches from the grill and drizzle with honey.
- In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat for about 5-7 minutes until the raspberries break down into a sauce.
- Strain the raspberry sauce through a fine mesh sieve to remove seeds.
- Serve the grilled peaches with a scoop of vanilla ice cream, drizzled with the raspberry sauce.
- Sprinkle toasted almonds on top and garnish with fresh mint leaves.
