Chocolate Covered Strawberry Coconut Ice Cream Bars - Vegan
The Chocolate Covered Strawberry Coconut Dream Bars are a delightful fusion of tropical flavors and rich chocolate indulgence, perfect for a refreshing summer treat. Each bar features a luscious layer of creamy coconut milk blended with fresh strawberries, encased in a crisp dark chocolate shell, creating a harmonious balance of sweetness and richness.
Ingrédients
- 2 cups fresh strawberries, hulled and sliced
- 1 tablespoon honey
- 1 teaspoon lemon juice
- 2 cups canned coconut milk
- 1/4 cup shredded coconut
- 1 teaspoon vanilla extract
- 1/2 cup dark chocolate chips
- 1 tablespoon coconut oil
Instructions
- In a blender, combine the strawberries, honey, and lemon juice. Blend until smooth.
- In a separate bowl, whisk together the coconut milk, shredded coconut, and vanilla extract.
- Fill ice pop molds halfway with the strawberry mixture. Top with the coconut mixture, leaving a little space at the top for expansion. Freeze for at least 4 hours or until solid.
- Once the bars are frozen, melt the dark chocolate chips and coconut oil together in the microwave in 30-second intervals, stirring in between, until smooth.
- Remove the ice cream bars from the molds and dip each one into the melted chocolate. Place on a parchment-lined tray and return to the freezer until the chocolate is set, about 15 minutes.
