Ingrédients
- 2 cups all-purpose flour
- 1 1/2 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup olive oil
- 2/3 cup whole milk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon blood orange zest
- 2/3 cup fresh blood orange juice
- 1 cup confectioners' sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat the sugar, olive oil, milk, eggs, and vanilla extract until well combined.
- Add the blood orange zest and blood orange juice to the wet ingredients, mixing until incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- For the glaze, whisk together the confectioners' sugar with enough blood orange juice to create a thick yet pourable consistency.
