- 1 large sweet potato, cooked and mashed
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup

- 1/2 teaspoon baking powder

- 1/4 teaspoon salt
- 1 cup oat flour
- 1/2 cup chopped carrots
- 1/2 cup chopped zucchini

Instructions
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
- In a large mixing bowl, combine the mashed sweet potato, peanut butter, honey (or maple syrup), and vanilla extract until smooth.
- Stir in the baking powder, baking soda, and salt.
- Gradually add the oat flour and mix until a thick batter forms.
- Fold in the chopped carrots and zucchini until evenly distributed.
- If using, gently fold in the dark chocolate chips.
- Spread the batter evenly in the prepared baking dish and smooth the top.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
