Spinach and Feta Omelette - Vegetarian

Ingrédients
- 2 cups spinach
- 4 large eggs
- 1 tablespoon olive oil
- 1/2 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried dill
Instructions
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the red onion and sauté until softened, about 3-4 minutes.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- In a bowl, whisk the eggs with salt, pepper, and dill.
- Pour the egg mixture into the skillet, allowing it to spread evenly.
- Cook without stirring until the eggs are mostly set but still slightly runny on top, about 3-4 minutes.
- Sprinkle the feta cheese evenly over the omelette.
- Using a spatula, gently fold the omelette in half and cook for another minute, until the eggs are fully set and the cheese is slightly melted.
- Slide the omelette onto a plate and serve warm.
