Apple Cinnamon Steel Cut Oats - Vegan
Apple Cinnamon Steel Cut Oats embody the comforting essence of autumn in a warm and hearty breakfast dish. Made with tender steel cut oats simmered to perfection, and enhanced with the sweet and spicy blend of apples, cinnamon, and maple syrup, this oatmeal is the ideal way to start a brisk fall morning.
Ingrédients
- 1 cup steel cut oats
- 4 cups water
- 1 cup almond milk
- 2 medium apples, diced
- 2 tablespoons maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
Instructions
- In a medium pot, bring water to a boil.
- Stir in the steel cut oats and reduce heat to a simmer. Cook for 25-30 minutes, stirring occasionally, until the oats are tender.
- While the oats are cooking, in a small skillet, sauté the apples with 1 tablespoon of maple syrup and the cinnamon over medium heat until the apples are soft, about 5 minutes.
- Once the oats are cooked, stir in the almond milk, the remaining tablespoon of maple syrup, nutmeg, vanilla extract, and salt.
- Add the sautéed apples to the pot and stir to combine.
- Serve the oats in bowls, topped with chopped walnuts and dried cranberries.
