Ingrédients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 medium carrots, diced
- 2 cloves garlic, minced
- 1 cup green lentils, rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 1 cup frozen peas
- 1 cup corn kernels
- 4 large potatoes, peeled and chopped
- 1/4 cup unsweetened almond milk
- 2 tablespoons vegan butter
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, heat the olive oil over medium heat. Add the onion and carrots and sauté until softened, about 5-7 minutes.
- Add the garlic and cook for another 1-2 minutes until fragrant.
- Stir in the lentils, diced tomatoes, vegetable broth, thyme, rosemary, smoked paprika, and black pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes or until the lentils are tender and the mixture has thickened.
- Stir in the frozen peas and corn, and cook for another 5 minutes.
- While the lentil mixture is simmering, prepare the mashed potatoes. In a large pot, boil the potatoes until tender, about 15-20 minutes.
- Drain and mash the potatoes with almond milk, vegan butter, and salt until smooth and creamy.
- Spread the lentil mixture in an even layer in a baking dish, then top with the mashed potatoes, spreading them out evenly.
- Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden and slightly crispy on top.
- Allow to cool for a few minutes before serving. Enjoy your Hearty Vegan Lentil Shepherd’s Delight!
