Ingrédients
- 2 cans young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup vegetable broth
- 1 cup barbecue sauce
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon black pepper
- 4 whole whole wheat buns
- 1/2 cup coleslaw mix
- 1/4 cup vegan mayonnaise
- 1 tablespoon apple cider vinegar
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and sauté until translucent, about 5 minutes.
- Stir in the garlic and cook for an additional 1 minute.
- Add the drained jackfruit to the skillet and stir to combine.
- Pour in the vegetable broth, barbecue sauce, soy sauce, smoked paprika, cumin, and black pepper. Stir well.
- Reduce the heat and cover the skillet. Let it simmer for 20-25 minutes, stirring occasionally, until the jackfruit is tender.
- Use two forks to shred the jackfruit pieces into a pulled pork consistency.
- While the jackfruit simmers, prepare the coleslaw by combining coleslaw mix, vegan mayonnaise, and apple cider vinegar in a bowl. Mix well.
- Toast the whole wheat buns lightly if desired.
- Assemble the sandwiches by placing a generous amount of pulled jackfruit on the bottom half of each bun, topping with coleslaw, and then the top half of the bun.
