Mini quiches Lorraine - Vegetarian

Ingrédients
- 1 refrigerated refrigerated pie crust
- 4 slices bacon, diced
- 1 medium onion, finely chopped
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 cup Gruyère cheese, grated
- 2 tablespoons fresh chives, chopped
Instructions
- Preheat your oven to 375°F (190°C).
- Roll out the pie crust and cut into small circles to fit a mini muffin tin. Press the crust into the muffin cups.
- In a skillet, cook the diced bacon over medium heat until crispy. Remove the bacon and drain on paper towels.
- In the same skillet, sauté the chopped onion until softened and golden brown, about 5 minutes.
- In a bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg.
- Divide the cooked bacon and sautéed onion evenly among the muffin cups.
- Sprinkle grated Gruyère cheese on top of the bacon and onion mixture.
- Pour the egg mixture into each muffin cup, filling them almost to the top.
- Bake in the preheated oven for 15-20 minutes, or until the quiches are puffed and golden.
- Allow the mini quiches to cool slightly before removing them from the muffin tin. Garnish with chopped fresh chives before serving.
