The Zesty Lemon Herb Roast Chicken is an elegant and flavorful dish that combines the tangy zest of lemon with the earthy richness of fresh herbs. Roasted to golden perfection, this chicken promises a crispy skin and succulent, tender meat that’s infused with aromatic herbs and subtle citrus notes.
Ingrédients
- 1 large whole chicken (about 4 lbs)
- 2 tablespoons olive oil
- 2 teaspoons lemon zest
- 3 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- 1 large lemon, sliced
- 1/2 cup low-sodium chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, lemon zest, lemon juice, minced garlic, salt, pepper, thyme, rosemary, and parsley to form a paste.
- Place the chicken in a roasting pan. Using your hands, rub the lemon herb paste all over the chicken, ensuring it is evenly coated both on the outside and under the skin.
- Arrange the lemon slices around the chicken and pour the chicken broth into the bottom of the roasting pan.
- Roast the chicken in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crisp. Baste the chicken with pan juices every 30 minutes.
- Remove the chicken from the oven and let it rest for 10-15 minutes before carving. Serve with the roasted lemon slices and pan juices.
