Homemade Granola with Greek Yogurt - Vegetarian

Ingrédients
- 2 cups rolled oats
- 1/2 cup almonds, chopped
- 1/2 cup walnuts, chopped
- 1/4 cup sunflower seeds
- 1/4 cup honey
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 cups Greek yogurt
- 1 cup fresh berries (strawberries, blueberries, raspberries)
- 1 tablespoon chia seeds
Instructions
- Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, chopped almonds, chopped walnuts, and sunflower seeds.
- In a small bowl, whisk together the honey, melted coconut oil, vanilla extract, cinnamon, and salt until well combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture out on the prepared baking sheet in an even layer.
- Bake in the preheated oven for 20-25 minutes, stirring once halfway through, until the granola is golden brown and fragrant.
- Remove from the oven and let the granola cool completely on the baking sheet (it will become crisp as it cools).
- In serving bowls, layer the Greek yogurt, homemade granola, fresh berries, and a sprinkle of chia seeds.
