Ingrédients
- 4 cups fresh blackberries
- 1/2 cup granulated sugar
- 1/4 cup honey
- 1 cup water
- 1/2 cup fresh mint leaves
- 1/4 cup bourbon (optional)
- 1 tablespoon lemon juice
- 1 large egg white
Instructions
- In a small pot, combine sugar, honey, and water. Bring to a boil, stirring until sugar dissolves. Remove from heat and add mint leaves. Steep for 15 minutes, then strain and discard leaves.
- In a blender, combine blackberries and the mint syrup mixture. Blend until smooth, then strain through a fine sieve to remove seeds.
- Stir in lemon juice and bourbon if using. Chill mixture in the refrigerator for at least 2 hours.
- In a clean bowl, whip egg white to soft peaks and fold into chilled blackberry mixture.
- Pour mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches a sorbet consistency.
- Transfer to an airtight container and freeze for an additional 2 hours before serving.
