Ingrédients
- 2 large zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1/4 cup finely chopped green onions
- 1 large egg, beaten
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Place the grated zucchini in a colander over the sink, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
- After 10 minutes, squeeze the zucchini with a clean cloth or paper towel to remove excess water.
- In a large bowl, combine the squeezed zucchini, flour, Parmesan cheese, green onions, beaten egg, garlic powder, and black pepper. Mix well.
- Heat the olive oil in a large skillet over medium heat.
- Scoop heaping tablespoons of the zucchini mixture into the skillet and flatten them slightly with the back of the spoon to form fritters.
- Cook the fritters for about 2-3 minutes per side, or until golden brown and crisp.
- Transfer the fritters to a paper towel-lined plate to drain any excess oil before serving.
