  • 1 pack pack samosa pastry sheets
  • Vegetable oil oil for frying

Instructions
 

  • Boil the potatoes and green peas until tender. Drain and set aside.
  • Heat vegetable oil in a pan over medium heat. Add cumin seeds and allow them to sizzle.
  • Add the onion, ginger, and garlic, and sauté until the onions are golden brown.
  • Stir in the coriander powder, turmeric powder, garam masala, red chili powder, and salt. Cook for 2-3 minutes.
  • Add the boiled potatoes and peas to the pan. Mash slightly and mix well with the spices.
  • Squeeze lemon juice over the mixture and add chopped fresh coriander. Mix well and let the filling cool.
  • Place a small amount of filling on each samosa pastry sheet, fold into triangular shapes, and seal the edges with a little water.
  • Heat vegetable oil in a deep frying pan. Fry the samosas in batches until golden brown and crispy.
  • Drain on paper towels and serve with tangy tamarind sauce.
