Ingrédients
- 2 cups coconut milk
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground turmeric
- 1 tablespoon honey
- 1 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 1 pinch pinch black pepper
- 1 tablespoon finely chopped dried apricots
Instructions
- In a medium saucepan, combine the coconut milk, grated ginger, ground turmeric, honey, cinnamon, black pepper, and vanilla extract.
- Heat over medium heat until the mixture begins to simmer, stirring occasionally. Remove from heat and let cool to room temperature.
- Strain the mixture through a fine mesh sieve to remove ginger pulp.
- Stir in the finely chopped dried apricots.
- Pour the mixture into popsicle molds, leaving a small amount of space at the top to allow for expansion.
- Insert the popsicle sticks and freeze for at least 6 hours or until completely solid.
- When ready to eat, run warm water over the outside of the molds for a few seconds to loosen the popsicles.
