Roasted Garlic and Herb Chickpea Puree - Vegan

Ingrédients
- 1 can chickpeas, drained and rinsed
- 2 cloves garlic, roasted
- 2 tablespoons lemon juice
- 1 tablespoon tahini
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 1/4 cup water
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C) and wrap the garlic cloves in aluminum foil. Roast for 20 minutes or until soft.
- In a food processor, combine the chickpeas, roasted garlic, lemon juice, tahini, rosemary, thyme, salt, and pepper.
- Pulse the mixture a few times to combine the ingredients.
- With the food processor running, slowly drizzle in the olive oil and water until you reach a smooth, creamy consistency.
- Taste and adjust seasoning if necessary.
- Transfer the chickpea puree to a serving bowl and garnish with chopped fresh parsley.
- Serve with pita bread, vegetable sticks, or your favorite crackers.
