Keto Cauliflower Mac and Cheese Bites are the perfect combination of healthy and delicious. Ingrédients
- 1 medium head cauliflower, cut into florets
- 2 tablespoons cream cheese
- 1/4 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1/2 cup almond flour
- 1/4 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with parchment paper liners.
- Steam the cauliflower florets until they are tender, about 8-10 minutes. Let cool slightly.
- In a large bowl, mash the steamed cauliflower until it resembles rice.
- Add the cream cheese, heavy cream, cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and black pepper to the mashed cauliflower. Mix until well combined.
- In a separate small bowl, beat the eggs and then stir them into the cauliflower mixture.
- Fold in the almond flour and shredded mozzarella cheese until everything is well incorporated.
- Spoon the mixture evenly into the prepared muffin tin, filling each cup to the top.
- Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and set.
- Allow the bites to cool slightly before removing them from the muffin tin. Serve warm.
