Peach Almond Crumble Bars - Vegetarian
The Summertime Peach Delight bars are a quintessential warm-weather treat, boasting the rich flavors of ripe, juicy peaches and the nutty, satisfying crunch of almonds. These bars are a perfect blend of sweet and crumbly, making them an ideal dessert for picnics, barbecues, or just a sunny afternoon snack.
Ingrédients
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup unsalted butter, melted
- 1/2 cup almond slices
- 4 cup peaches, peeled and diced
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, mix together the flour, oats, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until well combined and crumbly.
- Reserve 1 cup of the crumble mixture and press the remaining mixture firmly into the bottom of the prepared baking pan.
- In another bowl, combine the diced peaches, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix gently until the peaches are evenly coated.
- Spread the peach mixture over the crust in the baking pan. Sprinkle the reserved crumble mixture and almond slices evenly over the top.
- Bake in the preheated oven for 40-45 minutes, or until the top is golden and the filling is bubbling.
- Allow the bars to cool completely in the pan on a wire rack before lifting out and slicing into squares.
