Ingrédients
- 2 cups canned chickpeas, drained and rinsed
- 1/4 cup bread crumbs
- 2 cloves garlic, minced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 large egg
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a food processor, pulse the chickpeas until coarsely ground.
- Transfer the chickpeas to a large bowl and add the bread crumbs, garlic, red onion, parsley, egg, lemon juice, cumin, coriander, paprika, salt, and black pepper. Mix until combined.
- Form the mixture into small patties, about 2 inches in diameter.
- Heat the olive oil in a skillet over medium heat.
- Cook the patties in batches, about 3-4 minutes on each side, until golden brown and crispy.
