Zucchini and Feta Fritters - Vegetarian
The Zucchini and Feta Fritters are a delightful addition to any spring brunch, offering a perfect blend of fresh, seasonal flavors. Ingrédients
- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup feta cheese, crumbled
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Place the grated zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the zucchini to remove as much liquid as possible and transfer it to a large mixing bowl.
- Add flour, eggs, feta cheese, dill, mint, and black pepper to the bowl with the zucchini. Mix until all ingredients are well combined.
- Heat olive oil in a large skillet over medium heat.
- Scoop a heaping tablespoon of the zucchini mixture and drop it into the skillet, flattening it slightly with the back of the spoon.
- Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
- Serve hot with a dollop of Greek yogurt or sour cream, if desired.
