Ingrédients
- 1 1/2 1/2 cups bran cereal
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup pureed pumpkin
- 1/2 cup honey
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup raisins
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease with cooking spray.
- In a large bowl, combine the bran cereal, whole wheat flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Mix well.
- In another bowl, whisk together the pumpkin puree, honey, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Fold in the raisins and chopped walnuts.
- Divide the batter evenly among the muffin cups, filling each about three-quarters full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
