Ingrédients
- 2 cups frozen mango chunks
- 1/2 cup white sugar
- 1/4 cup apple cider vinegar
- 1 medium red onion, finely chopped
- 1 tablespoon fresh ginger, grated
- 1 teaspoon mustard seeds
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon red chili flakes
- 1/2 teaspoon salt
- 1/4 cup golden raisins
Instructions
- In a medium saucepan, combine the frozen mango chunks, white sugar, and apple cider vinegar.
- Cook over medium heat, stirring occasionally, until the sugar has dissolved and the mangoes have softened, about 10 minutes.
- Add the finely chopped red onion and grated fresh ginger to the saucepan.
- Continue to cook until the onion is translucent and the ginger is fragrant, about 5-7 minutes.
- Stir in the mustard seeds, ground cumin, ground nutmeg, ground cloves, and red chili flakes.
- Cook for an additional 2 minutes to allow the spices to bloom.
- Add the salt and golden raisins, stirring to combine.
- Reduce the heat to low and simmer the chutney until thickened, approximately 20-25 minutes.
- Remove from heat and let cool slightly before transferring to a jar or container for storage.
- The chutney can be served immediately or stored in the refrigerator for up to 2 weeks.
