Lavender Earl Grey Tart - Vegetarian

Ingrédients
- 1 cup all-purpose flour
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 tablespoon dried culinary lavender
- 1 bag bag Earl Grey tea
- 1/4 teaspoon salt
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 3 large egg yolks
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, combine the flour, powdered sugar, salt, and dried lavender. Pulse until the lavender is finely ground.
- Add the butter and pulse until the mixture resembles coarse crumbs.
- Press the dough evenly into the bottom and sides of a 9-inch tart pans. Prick the bottom with a fork.
- Bake for 15-20 minutes or until lightly golden. Let it cool completely.
- In a small saucepan, heat the cream and milk over medium-low heat. Add the Earl Grey tea bag and steep for 5 minutes. Remove the tea bag.
- In a separate bowl, whisk the egg yolks and granulated sugar until pale and thick. Slowly pour in the warm cream mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon. Do not let it boil.
- Stir in the vanilla extract.
- Pour the custard into the cooled tart shell and refrigerate for at least 2 hours, or until set.
- Garnish with additional dried lavender and serve chilled.
