  • 1/2 cup whole milk
  • 3 large egg yolks
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a food processor, combine the flour, powdered sugar, salt, and dried lavender. Pulse until the lavender is finely ground.
  • Add the butter and pulse until the mixture resembles coarse crumbs.
  • Press the dough evenly into the bottom and sides of a 9-inch tart pans. Prick the bottom with a fork.
  • Bake for 15-20 minutes or until lightly golden. Let it cool completely.
  • In a small saucepan, heat the cream and milk over medium-low heat. Add the Earl Grey tea bag and steep for 5 minutes. Remove the tea bag.
  • In a separate bowl, whisk the egg yolks and granulated sugar until pale and thick. Slowly pour in the warm cream mixture, whisking constantly.
  • Return the mixture to the saucepan and cook over medium heat, stirring constantly until the mixture thickens and coats the back of a spoon. Do not let it boil.
  • Stir in the vanilla extract.
  • Pour the custard into the cooled tart shell and refrigerate for at least 2 hours, or until set.
  • Garnish with additional dried lavender and serve chilled.
