Honeydew Mint Granita - Low Calorie

Ingrédients
- 1 medium honeydew melon, seeded and cubed
- 1/4 cup fresh mint leaves
- 1/2 cup water
- 1/4 cup granulated sugar
- 1 tablespoon lime juice
Instructions
- In a small saucepan, combine the water and sugar. Heat over medium heat until the sugar is completely dissolved, creating a simple syrup. Remove from heat and allow to cool.
- In a blender, combine the honeydew melon cubes, mint leaves, lime juice, and the cooled simple syrup. Blend until smooth.
- Pour the mixture into a shallow baking dish and place it in the freezer.
- After 30 minutes, use a fork to scrape the ice crystals that have formed around the edges.
- Continue to freeze, scraping every 30 minutes until the entire mixture is granular and icy, about 3-4 hours total.
- Serve the granita in chilled bowls, garnished with additional mint leaves if desired.
