- 1 head head butter lettuce, leaves separated
- 1 cup red bell pepper, julienned
- 1 cup carrot, shredded
- 1 cup cucumber, julienned
- 1 cup purple cabbage, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, chopped
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon ginger, minced
- 1 clove garlic, minced
- 1/4 cup creamy peanut butter
- 2 tablespoons lime juice
- 1 tablespoon honey
- 2 tablespoons water
Instructions
- Prepare the peanut sauce by combining peanut butter, soy sauce, sesame oil, rice vinegar, minced ginger, garlic, lime juice, honey, and water in a bowl. Whisk until smooth and set aside.
- Lay out the separated butter lettuce leaves on a clean surface.
- Evenly distribute the red bell pepper, shredded carrot, cucumber, purple cabbage, fresh cilantro, and mint into the lettuce leaves.
- Drizzle the peanut sauce over the veggies in each lettuce leaf.
